Professional Chef's Diploma Level 3

Advance your cookery skills and aim for a position of responsibility in the catering industry with this advanced-level catering qualification.The level 3 Professional Chef’s Diploma offers a natural progression from level 2. If you’re already a chef, it’s ideal for mastering advanced cookery skills.

On this advanced-level practical course you learn how to:
• establish and develop positive working relationships in hospitality
• maintain the health safety and security of the working environment
• maintain food safety when storing preparing and cooking food
• prepare, cook and finish complex dishes in meat poultry fish vegetables
• prepare, cook and finish complex hot sauces, dressings and cold sauces, soups and cold desserts
• prepare, process and finish chocolate products
• prepare, finish and present canapes and cocktail products
• contribute to the control of resources and the development and introduction of recipes and menus

You also have the opportunity to study the CIEH Level 3 Award in Supervising Food Safety in Catering. This is a three-day intensive course for people working at supervisory level.
You develop supervisory organisational time-management and people skills and you learn how to work under pressure. On successful completion, you will gain the NVQ Level 3 Advanced Professional Cookery.
Applicants for a level 3 programme will normally have:
• at least 5 GCSEs at grade C or above (including some subjects related to the proposed area of study) and/or a completed level 2 award
• the willingness to study for an additional level 2 qualification in English and/or maths

Applicants will be invited to attend an interview and complete an internal assessment. All students will have their literacy and numeracy needs supported within the programme.
Successful completion of this course puts you in a good position for catering positions, which require individual responsibility and some supervisory experience.
Assessment of your practical skills is continuous, and we test your theoretical knowledge too. Your tutor monitors your progress and offers advice and guidance so you achieve the most from your study.

You learn primarily through practical sessions though there are theory sessions too.

The fee for international students for the 2016 entrance is £6,300 per year.

In just over three years, Oliver Shore has gone from dreaming of a career in cookery to working full-time as a chef and even serving a meal for Sir Richard Branson.

Oliver first came across cooking as a potential career when he studied food tech at school. He enjoyed it so much he thought it would be a great career to pursue at college.

The proximity of Banbury and Bicester College and the quality of the courses on offer were attractive to Oliver, so he registered to attend one of our Open Events.
